  • Kale – 12 cups, chopped
  • Lemon juice – 2 tbsps
  • Olive oil – 1 tbsp or more, if needed
  • Minced garlic – 1 tbsp
  • Soy sauce – 1 tsp
  • Salt – to taste
  • Fresh ground black pepper – to taste


  • Cook rinsed kale in a steamer for up to 10 minutes until just tender. The time will depend on how thick your kale is.
  • While the kale is cooking, whisk oil with lemon juice, soy sauce, garlic, salt and pepper. Place kale into a salad bowl, top with the sauce, toss to coat.
