Ingredients

(cooking time: 25 min; 4 servings)

  • Unsalted butter – 1 tbsp
  • Sweet onion – 3 tbsps, minced
  • Garlic – 1 clove, minced
  • Chicken broth – 1 cup
  • Pumpkin puree – 1 cup
  • 2 chipotle peppers in adobo sauce, small chopped
  • Low-fat milk – 1/3 cup
  • Ground sage – 1 tsp
  • Salt – ¾ tsp
  • Ground coriander – ¼ tsp
  • Ground cinnamon – 1/8 tsp
  • Ground nutmeg – 1/8 tsp

Instructions

Add butter to a sauce pan preheated to medium heat and let melt. Add onions and garlic, stir and cook for 3 minutes. Pour in chicken broth and whisk well; bring to boil, add pumpkin puree, peppers and sauce, and all ingredients up to the end. Bring to a simmer, then reduce heat to low and keep simmering until it’s time to serve.
