CHOOSE

Look for crisp heads that are pale yellow (Belgian endive) or bright green; avoid wilted leaves and brown spots.

STORE

Unwashed Belgian endive will keep in a perforated bag in the crisper for 1 to 2 weeks. Leafy green endive should be wrapped in a paper towel and a plastic bag; in the fridge, it will keep for 2 to 3 days.
