CHOOSE

Purchase wild Pacific or Atlantic herring caught in open water. When buying herring fillets, they should be firm to the touch, whole, and a bit slippery

STORE

Rinse and pat dry, place ice into a large container. Place fish onto a cooling rack (avoid overlapping). Close tightly with a lid, plastic wrap or aluminum foil. Replace ice daily, but, better still, do not store the fish longer than a day.
