Fresh mussels should only be purchased alive, in their shells. All shells should be tightly closed. If the shell is slightly open, tap it, and, if it does not immediately close, discard it. Good mussels have no off smell, no chipped or otherwise damaged shells.
Transfer mussels from their plastic bag to an open container or a simple bowl. Cover with a damp paper towel or cloth and put in the fridge – they will keep this way for a few days. NEVER store in water. Discard any water that gathers at the bottom of the container/bowl every day. Smell often and especially immediately before cooking – good mussels should smell like the sea.
