DIRECTIONS
  1. Fill a large pot with water. Rinse beans, and soak them in water for 8 hours.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion, bell pepper, minced garlic, and chopped celery. Cook for 4 min.
  3. Rinse red beans. Pour 6 cups of water in a large pot. Transfer the beans to the pot. Then, stir the vegetables into the beans. Add bay leaves, sage, parsley, cayenne pepper, dried thyme, and seasoning. Then, bring it to a boil. Reduce heat to medium-low and allow to simmer for 2 1/2 hours. Add sausage. Simmer for about half an hour.
  4. While the beans are simmering, bring water and white rice to a boil in a saucepan. Then, cover the saucepan, reduce heat, and allow the rice to simmer for about 20 minutes. Serve the red beans with rice. Enjoy!
