DIRECTIONS
  1. In a saucepan over medium, heat oil. Add chopped onion. Cook for 2 min, until softened. Add black beans, corn, brown sugar, salsa, and pepper. Mix well. Cook for  3 minutes.
  2. In a skillet over medium heat, melt 2 tsps of butter. Put a flour tortilla in the skillet. Sprinkle with Monterey Jack cheese. Top the flour tortilla with the bean mixture. Top with another flour tortilla. Cook until golden on both sides. Repeat the process with the remaining flour tortillas and black bean mixture. Enjoy your Black Bean Quesadillas!
