DIRECTIONS
  1. Pre-heat oven to 400°F/200°C/Gas Mark 6.
  2. Heat a large skillet over medium-high heat.
  3. Add sausage, onions and minced pepper. Cook till sausage if fully brown; crumble the sausage while stirring. Remove from heat, drain the excess liquid, and crumble if there are still bulk pieces left; set aside.
  4. Beat eggs with milk.
  5. Separate the biscuits. Roll out each, or flatten with your hand, and place into muffin cups.
  6. Divide sausage mixture between the cups, pour egg mixture, top with Monterey Jack.
  7. Bake until set (18 to 20 minutes).
