DIRECTIONS
- Pre-heat oven to 400°F/200°C/Gas Mark 6.
- Heat a large skillet over medium-high heat.
- Add sausage, onions and minced pepper. Cook till sausage if fully brown; crumble the sausage while stirring. Remove from heat, drain the excess liquid, and crumble if there are still bulk pieces left; set aside.
- Beat eggs with milk.
- Separate the biscuits. Roll out each, or flatten with your hand, and place into muffin cups.
- Divide sausage mixture between the cups, pour egg mixture, top with Monterey Jack.
- Bake until set (18 to 20 minutes).
