DIRECTIONS
  1. Pour water in a saucepan. Add chopped cauliflower, celery, carrots, cubed potatoes,  and chopped onion. Bring to a boil. Boil for 5 minutes, until tender. 
  2. In another saucepan, melt butter over medium. Stir in all-purpose flour. Continue cooking for 2 minutes. Remove the saucepan from heat. Slowly stir in milk.
  3. Return the saucepan to medium heat. Continue cooking until the soup is thick. Stir in cauliflower, celery, carrots, potatoes, onion, and cooking liquid. Season with salt and pepper to taste. Add Cheddar. Stir until the cheese melts. Enjoy your Cauliflower Soup!
