DIRECTIONS
  1. Preheat oven to 350° F/175° C/Gas Mark 4. Grease a 9-inch pie pan.
  2. In a large skillet, heat oil over medium-high heat. Add onions and fry, giving an occasional stir, until onions become soft. Add spinach and cook until excess moisture has evaporated.
  3. In a large bowl, mix eggs, cheese, salt and pepper. Add spinach mixture and stir until smooth. Scoop into prepared pie pan.
  4. Bake until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
