- Pour 1/2 cup broth in a saucepan. Add asparagus and onion. Bring to a boil. Reduce heat and cook until tender. Place in an electric blender. Puree until smooth.
- In the saucepan, melt butter. Stirring, add all-purpose flour, salt, and pepper. Let it cook for only 2 minutes! Add 1 1/4 cups vegetable broth. Increase the heat. Stirring, bring to a boil.
- Add the vegetable puree and milk. Stir. Whisk yogurt and lemon juice into the mixture. Stir and ladle into bowls. Sprinkle with Parmesan. Serve and enjoy your Healthy Asparagus Soup!
