German Potato Pancakes
- In a large bowl, beat together eggs, baking powder, salt, and pepper. Stir in flour and mix in shredded potatoes and finely chopped onion.
- In a large skillet, heat oil over medium heat. Working in batches, drop heaping tablespoonfuls of the potato mixture into the skillet and press to flatten. Cook about 3 minutes on each side, until golden browned and crisp. Drain on paper towels.
