DIRECTIONS
- In a skillet, heat oil over medium heat. Add cumin, garlic, and ginger paste. Stir and cook for a minute. Add potatoes to the skillet and season with cumin, garam masala, turmeric, paprika, and salt. Stirring occasionally, cook for 5 minutes, covered. Add cauliflower and cilantro and reduce heat to low. Cook for 10 minutes (until potatoes are tender). Optional: to make it less dry, add coconut milk and cook for 8 min more.
