DIRECTIONS
  1. Heat olive oil over medium heat in a large pot. Add chopped onions, carrots, and celery. Stirring, cook until the onion turns tender. Add garlic, oregano, bay leaf, and basil. Continue cooking for 2 more minutes.
  2. Add lentils, water, and tomatoes. Bring the soup to a boil. After that, reduce heat and simmer for about 1 hour.
  3. Add spinach and continue cooking until it wilts. Add vinegar. Season with salt and black pepper. Serve.
