DIRECTIONS
  1. Mix potatoes with crumbled bacon and onions.
  2. Spread the mixture on top of 4 tortillas, leaving a ½ edge free.
  3. Sprinkle with Cheddar. Cover each topped tortilla with another one.
  4. Smear butter on both sides of each quesadilla.
  5. Place a skillet over medium heat, let warm up. Cook quesadillas, one by one, on both sides, for 2 to 3 minutes per side.
  6. Serve hot with salsa and sour cream.
