6 slices, crumbled
8 wheat tortillas
2 cups, freshly shredded
2 tbsp., softened
Mashed Potato Quesadilla
- Mix potatoes with crumbled bacon and onions.
- Spread the mixture on top of 4 tortillas, leaving a ½ edge free.
- Sprinkle with Cheddar. Cover each topped tortilla with another one.
- Smear butter on both sides of each quesadilla.
- Place a skillet over medium heat, let warm up. Cook quesadillas, one by one, on both sides, for 2 to 3 minutes per side.
- Serve hot with salsa and sour cream.
