  1. Heat the oven to 375° F/190° C/Gas Mark 5.
  2. Prepare a shallow bowl or pie plate, beat the eggs in it, add onion and garlic powder, and whisk well.
  3. Add crushed saltine crackers to a separate plate.
  4. Pour the oil in a large skillet and heat it over a medium-high heat.
  5. First dip the pork chops in the egg mixture, then dip them in the crumbs pressing to coat, and then fry for 2 to 3 minutes per side or until golden brown.
  6. Place the ready pork chops on a baking sheet and bake for 45 minutes turning once. Serve.
