- Preheat the oven to 375° F (190° C/Gas mark 5).
- Cream together butter and sugars until smooth. Beat in eggs and vanilla extract. Beat until the mixture is fluffy.
- In a bowl, stir together all-purpose flour, baking soda, ground cinnamon, and salt. Next, gradually beat into the butter and sugar mixture. Drop by teaspoonfuls onto baking sheets.
- Bake for 8 minutes, or until golden. Allow to cool slightly. Transfer to the wire rack. Let the Oatmeal Cookies cool completely. Serve and enjoy!
