  1. Preheat broiler. Place the oven rack at about 6 inches (15 cm) from the source of heat. Use cooking spray to prepare the rack of a broiler pan.
  2. Season the fish with salt and pepper to taste. Place the salmon fillets on the broiler pan.
  3. In a small bowl, combine sugar and mustard. Spoon the sugar mixture onto top of fish fillets.
  4. Cook under the preheated broiler for about 10 minutes.
