Recipe pastry for a 9-inch pie crust
Cheddar cheese

Mayonnaise

DIRECTIONS
- Preheat the oven to 450° F (230° C).
- Press the crust into a pie pan. Using a fork, prick the bottom and sides of the crust. Bake for 10 minutes. Let the crust cool.
- Reduce the temperature to 350° F (175° C).
- Place the sliced tomatoes in a colander. Season the tomatoes with salt. Allow them to sit for about 10 min. Use a paper towel to blot excess moisture.
- Arrange tomatoes around the bottom of the crust in 1 layer (the tomato slices should overlap). Sprinkle with 1/2 garlic and 1/2 basil. Then, sprinkle with 1/2 Cheddar and 1/2 mozzarella. Repeat the process with the remaining ingredients (tomato slices, garlic, basil, cheeses). Spread mayo over the top of the pie.
- Bake for 30 minutes (until the cheese is bubbling). Let the Tomato Pie cool on the wire rack.
