Recipe pastry for a 9-inch pie crust 
Cheddar cheese

Mozzarella cheese 
1/2 cup, shredded
1/4 cup

3 cloves, minced

  1. Preheat the oven to 450° F (230° C).
  2. Press the crust into a pie pan. Using a fork, prick the bottom and sides of the crust. Bake for 10 minutes. Let the crust cool. 
  3. Reduce the temperature to 350° F (175° C).
  4. Place the sliced tomatoes in a colander. Season the tomatoes with salt. Allow them to sit for about 10 min. Use a paper towel to blot excess moisture.
  5. Arrange tomatoes around the bottom of the crust in 1 layer (the tomato slices should overlap). Sprinkle with 1/2 garlic and 1/2 basil. Then, sprinkle with 1/2 Cheddar and 1/2 mozzarella. Repeat the process with the remaining ingredients (tomato slices, garlic, basil, cheeses). Spread mayo over the top of the pie.
  6. Bake for 30 minutes (until the cheese is bubbling). Let the Tomato Pie cool on the wire rack.
