Amazing Cream of Mushroom Soup
- Pour broth in a large saucepan. Add mushrooms, chopped onion, and thyme. Cook for 10 minutes, until tender.
- Puree the mushroom mixture in a food processor (leave some chunks of vegetable in it).
- Melt the butter in the saucepan. Whisk in all-purpose flour until the mixture is smooth. Add salt, pepper, half and half, and puree. Stirring, bring to a boil. Continue cooking until the soup thickened. Adjust seasonings. Add sherry. Serve and enjoy your Cream of Mushroom Soup!
