DIRECTIONS
- Pour cider in a saucepan. Bring to a boil over high heat. Then, reduce heat. Stirring, let the cider simmer for 15 min, until reduced to 1 cup. Allow the cider to cool.
- Combine white sugar and 1 tbsp ground cinnamon in a small bowl. Set aside.
- Combine all-purpose flour, brown sugar, salt, baking soda, baking powder, ground nutmeg, and 1 1/2 tsps cinnamon in a bowl.
- In a separate bowl, whisk together butter, lightly beaten eggs, and cider.
- Pour the cider mixture over the flour mixture. Stir just until moist. Cover the bowl. Chill in the refrigerator for 1 hour. Divide the mixture in half.
- Prepare a surface by flouring it. Place the dough on the surface. Roll the dough into 1/2-inch thick rounds. Cut them out using a 2 1/2-inch cutter.
- Heat oil in a large stockpot over medium-high heat to 375° F (190° C).
- Add donuts to the stockpot. Cook for 1 min per side, or until golden and crispy. Line a plate with paper towels and transfer the donuts to the plate. Roll the donuts in the cinnamon mixture to coat. Enjoy your Apple Cider Donuts!
