DIRECTIONS
- In a saucepan, heat cream until bubbles appear. Remove the saucepan from heat. Stir in sugar until it dissolves. Transfer the mixture to a bowl. Let the mixture cool.
- In a food processor, combine avocado and cheese. Blend until smooth. Add lime juice. Blend. Whisk into the cream mixture.
- Place the avocado and cream cheese mixture in the ice cream maker. Freeze to make ice cream.
- Spoon the avocado and cream cheese mixture into the crust. Use a spatula to make the surface of the cheesecake smooth. Freeze for 2 hours. Before serving Avocado Cheesecake, allow it to sit at room temperature for 10 minutes. Enjoy!
