DIRECTIONS
  1. Preheat oven to 425° F/220° C/Gas Mark 7.
  2. Season the quail with salt and pepper, and wrap with bacon. Put quail in a roasting pan breast side down. Spread melted butter over the quail.
  3. Put the quail in the oven and bake for 10 minutes. Reduce heat to 325° F/165° C/ Gas Mark 3, cover the pan and continue cooking for 40 to 45 minutes. Let the quail cool for 5 to 10 minutes before serving.
