- Cook bacon for 5 minutes in a skillet over medium, or until crisp. Drain and crumble.
- Heat the skillet with the bacon fat over medium. Cook onion for 5 minutes, or until soft. Add garlic. Cook for 1 minute, or until fragrant. Add flour. Cook for 3 minutes, whisking, until golden. Add chicken broth, milk, and beer. Cook for 15 minutes, or until thickened.
- Next, add Cheddar cheese. Stirring, keep cooking for 5 minutes, or until slightly reduced. Season with salt and ground black pepper to taste. Add bacon. Serve and enjoy your Beer Cheese Soup!
