DIRECTIONS
  1. Slice pepper to make four 1/2-inch-thick rings. Remove seeds and flesh. 
  2. In a skillet, heat oil over medium heat. Cook pepper rings for about 2 minutes. Turn over. Crack 1 egg into each bell ring. Cover the skillet. Cook for a few minutes, until eggs reach the desired doneness.
  3. Season with salt and pepper. Garnish with parsley. Enjoy your Bell Pepper Egg!
