DIRECTIONS
- Heat canola oil over medium in a medium skillet. Arrange potatoes in an even layer. Cook for several minutes (until the potato pieces start to brown). Let each side of each potato piece brown before moving them around.
- Transfer the potato pieces to a plate using a slotted spoon. Season with salt, parsley and sprinkle with Parmesan cheese. Serve.
