  1. Heat butter over medium heat in a pot until melted. Add flour. Stir well.
  2.  Reduce heat to low. Stirring constantly, cook for 2 min. Add milk and chicken stock. Stir and season with salt and pepper. Bring the mixture to a boil and continue cooking for 10 minutes (low heat).
  3. Pour water into a pot. Add salt. Bring to a boil. Add broccoli and cook 2 minutes (until tender). Remove the pot from heat, drain. Set aside.
  4. Gradually mix cheeses into the first pot until melted. Add broccoli. Cook for 5 minutes. Enjoy your Broccoli Cheese Soup!
