DIRECTIONS
  1. Preheat oven to 350° F (175° C).
  2. Pour water in a large pot. Bring to a boil. Add carrots and cook until tender. Drain. Transfer them to a mixing bowl.
  3. Using an electric mixer, beat carrots with sugar, baking powder, and vanilla until smooth. Add eggs, all-purpose flour, and margarine. Mix well. Transfer the mixture to a baking dish.
  4. Bake for 1 hour (until the top is golden brown). Enjoy your Healthy Carrot Souffle!
