7 cups, peeled, chopped
Carrot Soup with Orange
- Prepare a saucepan by spraying it with oil. Over medium heat, stirring occasionally, cook onion for 3 minutes, or until soft. Add chopped carrots. Cook until soft (5 minutes). Add vegetable stock. Bring to a boil.
- Add 2 strips of orange rind. Reduce to medium-low. Allow to simmer until tender (20 minutes). Discard the rind.
- Let the Carrot Soup cool for 5 minutes. Using a blender, puree until smooth. Add orange juice. Cook for 2 minutes over medium heat, or until heated through. If desired top with parsley leaves.
