How to Make Chicken Caprese Salad

  1. In a blender, combine garlic, vinegar, and basil. Drizzle oil (1/3 cup and 2 tbsp) with the motor running. Blend until incorporated. Season with salt and ground black pepper to taste. 
  2. Brush the chicken with the remaining olive oil (2 tbsp). Season with salt and ground black pepper to taste. 
  3. Brush a grill pan with oil (1 tbsp). Over medium-high heat, sear the chicken for 2 minutes per side. Then, cover and cook over medium for 8 minutes, or until cooked through. 
  4. Next, let the chicken rest on a cutting board for 5 minutes. Slice into thin strips. 
  5. In a bowl, combine mozzarella, tomatoes, and chicken. Drizzle with the vinegar mixture. Garnish with Parmesan cheese and basil. Serve and enjoy your Caprese Salad!
