- In a bowl, whisk egg and milk. Add the fish. Set aside.
- On a plate, mix flour, cayenne, salt, and crushed crackers. Line a plate with paper towels.
- In a heavy-bottomed skillet over medium-high, heat oil (1 inch).
- Dredge the fish in the flour mixture. Then, add the fish to the skillet. Fry for 2 minutes per side, or until golden. Transfer the fish to the lined plate. Season with salt and ground black pepper to taste. Serve.
