DIRECTIONS
  1. In a pot, melt butter. Add diced onion and 1 pinch salt. Stirring, cook for 10 min, until softened. 
  2. Increase the heat to medium-high. Add tomato paste. Stirring, cook for 2 min, until it starts to turn brown. Add butternut squash, 1 tsp salt, broth, and cayenne pepper. Reduce heat to medium-low and simmer for 15 min, until the squash is tender. Then, reduce heat to low. Using an immersion blender, blend the mixture until smooth. Add heavy cream and maple syrup. Stir well. 
  3. Before serving, garnish with cream, chives, and pomegranate seeds. Enjoy your Comforting Butternut Bisque!
