Easy Keto Butter Chicken

  1. Whisk sour cream, minced garlic, lemon juice, garam masala, minced ginger, cumin, chili powder, and salt (1 tsp) in a bowl. Add chicken. Toss to coat. Cover the bowl with plastic wrap. Refrigerate for 30 minutes. 
  2. Heat clarified butter (1 tbsp) in a skillet over medium. Cook chicken for 5 minutes, or until golden. Next, transfer to a plate. 
  3. To make the sauce: add clarified butter (1 tbsp) to the skillet. Add onion and cook for 5 minutes, or until softened. Add 1 tbsp ginger and 2 cloves garlic. Cook for 1 minute. 
  4. Next, add tomato paste, water, garam masala (2 tsp), and fenugreek (if using). Transfer the chicken back to the skillet. Bring to a simmer. 
  5. Add heavy cream. Keep cooking for about 7 minutes, or until tender. Before serving, garnish with cilantro leaves if desired. Enjoy your Keto Butter Chicken!
