DIRECTIONS
- While preheating oven to 475°F/245°C, grease a 1 ½ quart baking dish. It’s better to use a glass dish with a lid.
- Spread ¼ cup of marmalade in the baking dish and place the duck breasts there. Use a fork to make holes in the breasts, and then cover the breasts with a layer of marmalade. Sprinkle the top of the meat with garlic. Set slices of onion and orange around the breasts.
- Put the covered dish into the oven and bake for about 15 minutes. Then remove the lid and cover the breasts with one more layer of marmalade, about 1 tablespoon for each. Continue cooking without the lid. Bake until medium rare, 145°F/63°C.
