DIRECTIONS
  1. While preheating oven to 475°F/245°C, grease a 1 ½ quart baking dish. It’s better to use a glass dish with a lid.
  2. Spread ¼ cup of marmalade in the baking dish and place the duck breasts there. Use a fork to make holes in the breasts, and then cover the breasts with a layer of marmalade. Sprinkle the top of the meat with garlic. Set slices of onion and orange around the breasts.
  3. Put the covered dish into the oven and bake for about 15 minutes. Then remove the lid and cover the breasts with one more layer of marmalade, about 1 tablespoon for each. Continue cooking without the lid. Bake until medium rare, 145°F/63°C.
