DIRECTIONS
  1. Preheat the oven to 350° F (180° C/Gas mark 4).
  2. Prepare a 9x13-inch baking pan: line it with foil, leaving an overhang. Spray with cooking spray. 
  3. To make the crust, combine flour, confectioners sugar, cornstarch, and salt in a food processor. Pulse until combined. Add butter. Pulse until looks like coarse sand. Transfer to the pan. Pat down. 
  4. Bake in the preheated oven, rotating halfway through, for 20 minutes, or until golden around the edges. 
  5. To make the filling, whisk sugar, eggs, egg yolks, and juice in a saucepan over medium heat for 5 minutes, or until thickened. Remove from heat. Whisk in lemon zest and butter. 
  6. Next, lower the oven temperature to 300° F (150° C). 
  7. Pour the filling over the crust. 
  8. Bake in the oven for 13 minutes, or until set. Then, allow to cool to room temperature on a wire rack. Next, refrigerate for 2 hours. 
  9. Remove from the pan and slice. Dust with confectioners' sugar. Serve and enjoy your Lemon Bars!
