  1. Pour water into a pot. Add salt. Bring to a boil. Cook pasta until al dente. Reserving cooking water (about 2/3 cup), drain the pasta.
  2. Melt butter (1 tbsp) and oil in a skillet over medium. Add ground black pepper. Cook for 1 minute, or until fragrant. 
  3. Add cooking water (1/3 cup). Bring to a simmer. Whisk in butter (1 tbsp). Toss the pasta into the mixture. 
  4. Add Pecorino and Parmesan. Toss until melty. Remove the skillet from heat when half of the cheese has melted. Add more cooking water if necessary. Serve and enjoy your Cacio e Pepe!
