5 cups, peeled, chopped

Red wine vinegar

Flavorful Moroccan Carrots
- Pour water into a pot. Add salt. Bring to a boil. Cook carrots for 3 minutes, or until tender. Drain.
- Sprinkle chopped garlic with salt. Mash with a side of a knife to form a paste. Transfer to a large bowl. Whisk in red wine vinegar, olive oil, and cumin.
- Add carrots. Stir well. Add parsley. Stir to coat. Serve chilled. Enjoy your Moroccan Salad!
