4 cups, peeled and cubed

Green Soup with Kale
- In a pot over high, combine cubed potatoes, water, bouillon, and minced garlic. Bring to a boil. Reduce to medium. Simmer for 10 minutes, until tender.
- Meanwhile, preheat oven to 350° F (175° C/Gas mark 4). Cut pumpernickel bread into squares or into any Halloween-themed shape. Place the bread on a baking sheet. Bake in the preheated oven for 5 minutes, until crispy.
- Blend spinach, nutritional yeast, cashews, 1/2 cup cooking liquid, and liquid smoke until the mixture is smooth.
- While the potatoes are in the pot, mash them. Stir in the green mixture until incorporated. Serve with croutons. Enjoy your Healthy Potato Soup!
