  1. Beat together butter, butterscotch mix, and brown sugar until smooth. Add the egg, stir well. Sift flour together with baking soda and spices; add in small batches into the pudding mixture, stir to combine well. Cover with plastic wrap and chill for 1 hour.
  2. While preheating oven to 350°F/180°C/Gas Mark 4, grease the cookie sheets. Dust the work surface with flour; roll out the gingerbread dough till 1/8 inch thick. Cut out men-shapes with a cookie cutter.
  3. Arrange unbaked cookies on a cookie sheet 1 inch apart, bake for about 10 minutes or until the edges get golden. Transfer to wire racks and let cool.
