DIRECTIONS
- Heat an outdoor grill to a medium-high heat.
- Put the cod fillet on aluminum foil and season it with salt, black pepper, and garlic powder.
- Place spinach, tomato, and onion on the cod piece and season with salt and black pepper again.
- Drizzle olive oil and balsamic vinegar over cod and top with Mozzarella cheese.
- Fold the foil over the cod forming a packet and seal the edges.
- Cook for 7 to 9 minutes or until fish is easily flaked with a fork.
