DIRECTIONS
  1. Heat an outdoor grill to a medium-high heat.
  2. Put the cod fillet on aluminum foil and season it with salt, black pepper, and garlic powder.
  3. Place spinach, tomato, and onion on the cod piece and season with salt and black pepper again.
  4. Drizzle olive oil and balsamic vinegar over cod and top with Mozzarella cheese.
  5. Fold the foil over the cod forming a packet and seal the edges.
  6. Cook for 7 to 9 minutes or until fish is easily flaked with a fork.
