Yukon Gold potatoes
5, peeled, cut into 2-inch pieces
Salt

Butter
6 tbsp, divided
Green onions
4, sliced
Kale
1 bunch, stemmed, sliced into 1/2-inch-ribbons
Milk
3/4 cup
Heavy cream
1/2 cup
Ground black pepper
to taste

DIRECTIONS
- Place potatoes in a pot. Cover with water. Add salt. Bring to a boil. Cook for 10 minutes, or until soft. Drain. Return to the pot.
- In a pot, melt butter (4 tbsp). Add onions. Cook for 2 minutes, or until beginning to soften. Add kale, milk, and heavy cream. Keep cooking for 4 minutes, or until the kale wilts.
- Mash the kale and onion mixture into the potatoes. Season with salt and ground black pepper to taste. Before serving, top with butter (2 tbsp) and more ground black pepper. Enjoy your Colcannon!
