2 1/2 cups
1/2 cup, shredded
1 tbsp, chopped, plus for garnish
Leftover Fried Mashed Potatoes
- Pour enough vegetable oil into a skillet to fill it a third of the way up. Heat the oil over medium heat.
- Combine leftover mashed potatoes, beaten egg, Cheddar, chopped chives, sauce, and salt in a bowl.
- Drop heaping tablespoons of the potato mixture into the oil. Fry 2 minutes on each side, or until golden. If desired, top with sour cream and garnish your fried mashed potatoes with chopped chives before serving.
