  1. Cover a baking sheet with parchment paper.
  2. Add 24 oz chocolate chips into a microwave-safe glass bowl; nuke at intervals until completely melted. Mix in coffee granules, water and cream cheese until smooth. Chill for half an hour.
  3. Smear your hands with a drop of vegetable oil before you start shaping 1-inch balls from the chocolate mixture. Place the truffles onto the parchment-lined baking sheet. Don’t crowd the candy!  Chill for 1+ hour until firm.
  4. Optional:  nuke the 6 oz chocolate chips mixed with shortening in a microwave-safe glass bowl at intervals until melted. One by one, dip truffles into the glaze and place back onto the parchment-lined pan. Let set (30+ minutes) and serve.
