Chicken breasts
1 lb., boneless, skinless, cut into pieces
Parmesan cheese
½ cup, divided in half
Cold water

Panko breadcrumbs

  1. Heat the oven to 400° F/200° C/Gas Mark 6.
  2. Prepare a baking sheet and line it with aluminum foil or parchment paper. Set aside.
  3. Add all but the last ingredients (from chicken breasts to pepper, take half of the total Parmesan amount) to a food processor and pulse for about 1 minute or until all the ingredients are well-combined.
  4. Place the breadcrumbs and the rest of the cheese in a shallow dish.
  5. Shape small nuggets from the minced chicken mixture and coat them with the breadcrumb mixture.
  6. Place nuggets on a baking sheet and drizzle with oil.
  7. Bake for 12 to 15 minutes, then cook in the broiler for 2 to 3 minutes or until nuggets become lightly golden.
  8. Serve warm with ketchup or your favorite dip.
