- Combine potatoes with bacon, cheese, sliced chives, and garlic powder. Season with salt and ground black pepper to taste. Stir to combine.
- Place beaten eggs and bread crumbs in separate bowls. With a small cookie scoop, scoop the mashed potato mixture. Roll the mixture into a ball. Dredge in the beaten egg. Then, dredge it in the bread crumbs.
- Heat 3 inches of vegetable oil in a cast-iron skillet to 375° F (190° C).
- Fry potato balls for 2 minutes, until golden. Drain on paper towels. Season with salt. Serve and enjoy your Potato Balls!
