Mashed potatoes

  1. Combine potatoes with bacon, cheese, sliced chives, and garlic powder. Season with salt and ground black pepper to taste. Stir to combine. 
  2. Place beaten eggs and bread crumbs in separate bowls. With a small cookie scoop, scoop the mashed potato mixture. Roll the mixture into a ball. Dredge in the beaten egg. Then, dredge it in the bread crumbs. 
  3. Heat 3 inches of vegetable oil in a cast-iron skillet to 375° F (190° C). 
  4. Fry potato balls for 2 minutes, until golden. Drain on paper towels. Season with salt. Serve and enjoy your Potato Balls!
