  1. Beat butter and cream cheese together in a bowl. The mixture should be smooth. Add vanilla extract. Add confectioners' sugar. Beat until the mixture is smooth. 
  2. Mix in the flaked coconut. Roll into balls. Roll in the ground cinnamon. Arrange the cookies on the cookie sheet. Allow to chill until set. Serve and enjoy your Irish Potato Candy!
