DIRECTIONS
  1. Place potatoes in a cheesecloth. Wring to extract moisture. Then, combine potatoes, beaten eggs, grated onion, all-purpose flour, and salt. 
  2. Heat oil in a large skillet over medium-high. Spoon 2 tablespoons potato mixture per latke into the oil. Press to form patties. Fry until golden on each side. Before serving, drain on paper towels.
