DIRECTIONS
  1. In a saucepan, heat oil over medium-high. Add onion. Cook until soft. 
  2. Add pumpkin, broth, heavy cream, spice, and salt. Stirring occasionally, cook for 3 minutes, or until simmers. 
  3. Ladle the pumpkin soup into bowls. Dress it up with croutons or pumpkin seeds if desired. Serve and enjoy!
