DIRECTIONS
  1. Set an oven rack to the oven's center position. Preheat the oven to 400° F (200° C/Gas mark 6). Prepare a 12-cup muffin pan by lining it with paper liners. 
  2. In a bowl, whisk together flour (all-purpose and whole-wheat), ground cinnamon, baking soda, salt, and baking powder. 
  3. In another bowl, whisk together brown sugar, syrup, coconut oil, vanilla extract, and egg whites. Add bananas. Stir. Add the flour mixture. Stir to combine. Add nuts. Stir. 
  4. Transfer the batter to the muffin pan (about 1/4 cup in each cup). 
  5. Bake in the preheated oven for 20 minutes. Use a toothpick to check for doneness: insert it in the center and check if it comes out clean. Allow to cool for 10 minutes. Transfer to a wire rack to cool completely. Serve and enjoy your quick Banana Bread Muffins!
