Strip roast

  1. Season the beef generously with salt and ground black pepper. In a bowl, combine 3 tbsp oil, rosemary, and garlic. Rub all over the beef. Cover with plastic wrap. Let chill for 12 hours.
  2. Preheat the oven to 400° F (200° C/Gas mark 6). 
  3. Place the meat on a wire rack set inside a baking sheet. Roast in the preheated oven for 2 1/2 hours, or until an instant-read thermometer inserted into the thickest part registers 250° F (120° C). Allow to rest for about 1 hour.
  4. Mix Greek yogurt, sour cream, horseradish, and zest. Season with salt to taste.
  5. In a skillet, heat olive oil over medium. Cook roast for 2 minutes per side, or until browned. Slice and serve with the sauce.
